When you get the chance to use a spice blend known as ‘Aussie Blend’, there’s really only one dish that comes to mind. It has to be burgers. Nothing is more Aussie than a good burger on a beautiful sunny day! And so, the Aussie Burgers recipe was born.
It ticks a whole lot of dietary boxes:
- ‘Clean eating’ (although I don’t love that term!)
- Easy to make
- Chef approved (aka he ate it approximately 20 seconds after I took the photo!)
So let’s get down to it – less talking, more creating!
Makes 4 burgers
300g beef mince (or mince of choice)
2 tsp Spice Quarter Aussie Spice Blend
1 Tbsp almond meal
8 large portobello mushrooms, stems removed
1 heaped Tbsp coconut oil, melted
1 tsp sesame seeds
Mix mince and spice blend together in a bowl. Allow the flavour to infuse into the meat for at least 30 minutes. I left mine in the fridge overnight.
Add almond meal, and combine. Form into 4 patties, then flatten slightly.
Chef’s note: If you’re using a higher fat mince, you might need to add a bit more almond meal to hold the burger together
Preheat oven to 200C.
Cover the mushroom tops with the melted coconut oil – use more if you need. Place on a lined tray, then sprinkle with sesame seeds.
Bake mushrooms for 10-12 minutes. Remove, and allow to cool slightly.
Finally, cook or grill the burgers to your preference.
Serve each patty between two mushrooms, then add your favourite burger fillings. The pictured burger is filled with baby spinach, a slice or two of beetroot and a fried egg.
