Moroccan Cauliflower Rice – A Spice Quarter Inspired Dish

Whether you need to increase your vegetable intake, or want to reduce your carb intake, we’ve got you covered. This super simple Moroccan Cauliflower Rice contains just a few ingredients.

It’s full of flavour, but not overwhelming. Both Mum (the one who can’t handle much spice) and Nick (the heat lover) gave it a thumbs up.

It ticks a whole lot of dietary boxes:

  • Paleo
  • Vegan
  • Vegetarian
  • Wholefood
  • ‘Clean eating’ (although I don’t love that term!)
  • Gluten-free
  • Dairy-free
  • Low-carb/LCHF
  • Easy to make

All of my ingredients were also organic, but you don’t have to use organic if you don’t want!

So let’s get to it:

Moroccan Cauliflower Rice Recipe

Moroccan Cauliflower Rice

Makes 1-2 serves

1/2 small head cauliflower

1 Tbsp coconut oil (or oil of choice)

3/4 – 1 tsp Spice Quarter Ras El Hanout Spice Blend (depending on how spicy you like it)


Using your food processor, blitz your cauliflower until it’s in rice-sized pieces.

Heat your oil over a medium-high heat in a pan. Keep extra oil handy just in case – the cauliflower is a surprisingly thirsty vegetable!

Add cauliflower ‘rice’ into your pan. Stir-fry for a few minutes, or until it starts to soften.

Sprinkle your spice blend over the cauliflower rice. Mix with a wooden spoon until the spices colour all of the rice. Add extra oil if necessary.

Serve up with your preferred garnish. I like a sprig of mint (pictured) or coriander, or even some chopped spring onion.


Now, she might not be the prettiest dish in the world (I also have terrible lighting in my house). But she is TASTY! Plus, you can pop her in the fridge for later, or even freeze her for an emergency meal.
